LC Sweet & Sour Chicken Recipe

I made this last night and it really reminded me of the meal I use to
make with the sweet & sour packet that required a cup of sugar. It
still uses ketchup, so it may be a bit carbier than some people allow,
but I still lost half a pound after eating it.

Basically, I cooked up chicken chunks, onion, and green bell peppers
in the frying pan. Seperately, in a bowl, I mixed together some
Smuckers SF apricot jelly, ketchup, 2 packets of Splenda, a little
ginger, some sesame seeds, and a little water. I added this to the
chicken when it was cooked and let it boil down until it was thick.

Tasted great to me and my non-LC wife liked it too. Maybe once Heinz
introduced that LC ketchup I saw on the news it can be really low
carb. You can probably adjust the recipe using some other tomato
source with lower carbs. I used about 4 tablespoons for 3 good size
portions.

Sounds delicious. Have you tried Keto brand ketchup? It's only 1
gram/ Tablespoon and it's very good, although a little pricey. ($3.50
at my local health food store)
