I had missed two or three WI's so when the weather was turning bad,
AGAIN i took the ooppertunity to go to wi on thursday... i lost.6, which on
a weekly basis is pretty goood for me, but when i miss a few weeks i usually
gain nine or ten pounds... so this was a great result, Lee

Whoo hoo! Good for you! I haven't been so good this week, with all
the snow I haven't been able to go to town to workout, haven't been
tracking worth carp either. So instead of hitting my 5% this week, I
have prolly gained, which is a bummer cuz it would have been a loss
for 7 weeks in a row! :( If so then I will simply pick myself up and
start all over! :) Do you have much snow? We have about 10-12 inches
right now.

we have gotten a LOT of snow but the melt is faster than the fall so not a
lot on the ground right now.

good luck at WI i am starving, I am in points but i know i am hungry because
i want good stuff and my belly is growling, so if i go over points i just do
because i hate to hear my belly growl and to feel this hungry, i figure its
the cold, Lee

Do you like mushrooms, Lee? I invented a nice chicken and mushroom
concoction that's only around 6 points per serve. Big serves too! If you
like chilli, even better because they'll make your insides work while you're
not even thinking about it.

If you like, I'll post it. It's nothing spectacular but it's pretty good.

Well here goes. The measurements are metric, me being an Orstraylyan and
all, but you'll get the idea. Garden Gourmet is a brand of pasty stuff
that's available here, which you should be able to find by another name at
your local supermarket.

450g Chicken Breast - 10.5
300g Mushrooms - 0
300g Capsicum - 0
50g Garden Gourmet Hot Chilli - 1
20g Cornflour - 1

Total 12.5 points.

The best vessel for this concoction would be a bowl-shaped frying pan. Not
quite a wok, but a similar shape.

Put 50g (a bit under 2 oz) of hot chilli mix into the pan and smear it so
that the chicken that follows it will have something to sit in.

Chop up 450g (about 1 pound) of chicken breast into large chunks and stir it
around in the chilli mix with the temperature at around a third.

Place a lid on the pan and allow the chicken to "brown" (it actually should
just go white), tossing and stirring occasionally.

Add the mushrooms and put the lid on. You may need to turn the temperature
down slightly so that the whole lot simmers.

When the mushrooms are soft, add the chopped capsicum.

When the capsicums are soft, add the cornflour (previously mixed with a
small amount of water).

Stir vigorously.

Serve with a single-serve pack of frozen veggies or some rice, or maybe even
both.
