Quick breakfast idea: fried custard and berries
 
I was making French toast for my little girl this morning, and though I was
using low carb, whole grain bread, it was carbier than I wanted to start my
day, so I wasn't having any. It smelled so good, though, it was driving me
crazy. As her toast was cooking, I poured the last bit of egg onto the
bread, and a little bit ran off onto the griddle. I flipped it up onto the
bread so it wouldn't get too brown, and I was intrigued by how it looked
(kind of tasty).

So when I got done with her toast, I made up another batch of the egg
mixture, consisting of one egg, maybe about a quarter cup of milk, a splash
of vanilla, and two packets of Splenda. I poured the mixture onto the
griddle, hoping I could get a crepe-like thing going, but it didn't hold
together, so I more or less scrambled it. (Yes, I know if you add less milk
it will hold together in a "crepe" but to me that is just an omelet.)

When that was done (set, but still shiny), I put it in a bowl, then sliced
about 4 ounces of strawberries on top, sprinkled another packet of Splenda
on it, then mixed it all up.

It was surprisingly good! Very filling, yet with a light, refreshing taste.
The combination of the warm "custard" with the cold berries was especially
enjoyable. And the whole thing took less than 5 minutes. Made like this,
it would have about 12g carbs, but someone with a very low carb limit could
conserve by using cream instead of milk, DaVinci instead of Splenda, and
fewer berries (more custard).
