I just bought a Vitamix machine. Have
not recieved it as of yet (boy, I hope it doesn't have to go back!) Are
there any low carb recipes for this machine?

A lot of people use their Vitamix for juicing fruit or to reduce root
veggies into a puree. Very high carb.

Low carb smoothies are easy to make with much lower power machines.
They will work fine in your more powerful one. You bought a truck to do
the work of a dolly is all. Ice cubes. Protein powder. Flavoring or
sme frozen berries. Maybe splenda. Maybe oil. Cream maybe heavy maybe
half n half. Grind it up. Drink it.

You'll also be able to make soups with pureed low carb veggies. That
should concentrate the flavors. Blanch low carb veggie on sale du jour.
Toss in the grinder machine. Add an herb or a spice. Blend into a
sauce or a soup. Use to flavor your meal.

You will also be able to reduce very tough meats into a paste for tastey
stews. You'll need to use veggies for texture in such a stew. Dice the
tough meat and cook. Toss into the grinder and blend into submission.
Add liquid until it pours. Use in a stew or filter for a broth.

I've made nut butter in a food processor. I wonder if that will work in
a Vitamix? It would be a mess to try and find out but if it works
you'll have a source for butter made out of any nut you want or paste
made out of any legume you want. Hummus is made by mixing a legume
paste (chick pea aka garbanzo) with a seed butter (sesame ground into
submission).

I Googled it & found that the fiber content is high in the smoothies as it
does not separate the pulp from the juice, it is ALL contained in the
juice. I can make peanut butter too with 'nuthing' but peanuts! I'm not
much for red meat (just a personal preference) I love hummus. What is
lower carb that I can dip into it? I do have a protein powder too. It is
due to arrive on the morrow, as they say. I am so excited!! I am over
weight, diabetic blah, blah. I sure hope this will help me. Fingers
