More than doable. Eat 500 calories less each day, you'll see it
falling off, although water bounce/etc. may make it less noticeable.

Maybe you're just training too hard. What's your workout rotation
like? You should not be doing the same things every time you go. I
like to do an hour of cardio (varied between long endurance and high
intensity intervals) followed by an hour or so of weights, on a really
simple arms/legs rotation.

Be sure to give yourself a resting period, too. Are those 3-4 times
in a week one right after another? It's not a bad idea to take it
easy the day after a hard workout.

Yet, I'm eating mostly diet shakes, nutrition bars, veggies, fruits,
chicken, the odd popsicle or cookie (rare), that's about it, oh maybe
jello and pasta once a week maybe (bad carbs).


Doesn't sound like you're getting much protein at all. Unless it's
really working out for you, I recommend just ditching the diet shakes
and bars. Most of that market is hokey BS that looks nutritious, but
carries very little dietary value.

Eat more fish.


Anyone ? Need to hit the gym every day ? 4-6 hours day past
exhaustion ? Counterproductive ?


Don't run yourself into the ground. If you're really concerned with
the length of your workout, wear a heart monitor and read some
literature on target heart rate, then base your workout around that
instead.
