That's a good one! *Unbelievable, isn't it? *Unfortunately
if you offered books with low carb, healthy recipes you'd
get only a fraction of the response, because people won't
give up their old ways. *The sad thing is that we all know
the vast array of really good, tasty food that we can eat
on LC. *I think that's one of it's key features. *And with
some reasonable substitution, you can still have some
of the old comfort food. *For example, I take flax flat breads,
blind-bake them, apply pizza sauce, cheese, etc, then
broil them until the cheese melts. * It's certainly not the
same as real thin crust pizza, but it is tasty, quick and
easy to prepare. *My favorite is topping it with arugula.

I have a friend who was one of the best athletes in high school. *Now
in his 50's he's 100lbs+ over weight and morbidly obese. *He's had
problems with his knees,
sleep apnea, and has just been diagnosed with diabetes. * When I
gently suggested that one important thing to do now
is to lose weight, his reply was that it's not so much of
a problem now. *He's taking drugs and his blood sugar
is under control....

Over the years I've tried to get him interested in LC.
He even claimed he was doing LC at one point and
actually lost maybe 15lbs. *But within a few weeks
he was telling me how he's figured out he can go
off LC for a day, eat whatever he wants, and still
lose weight. *OF course I warned of the dangers of
doing that, but to no avail. *Few more weeks, you
know what happened.
