REC: Another Way to Cook Chicken
Chicken Breasts, boneless & skinless, pounded to about 1/4" thickness
Cream Cheese Spread with onions & chives (I didn't know they made this flavored
variety, if I can't find it at the store, I'll soften regular cream cheese and
make my own)
Bacon
Salt & Pepper to Taste
Its basically this....pound the chicken to about 1/4" thickness
spread cream cheese mixture, about 2 tablespoons per breast.
Fold chicken breast, or roll
Wrap 1 piece of bacon around chicken (secure with toothpick)
salt & pepper to taste
bake in 400 degree oven for 30-35 minutes or until chicken is done. If bacon
is still undercooked, broil briefly.
I think you could make Chicken Cordon Bleu this way, too--just layer
deli-thin ham and Swiss cheese, roll up, and wrap with bacon.
