Throw the couscous in a bowl, add spinach and pepper on top.

My idea was to make the egg over-easy, but the yolk burst on landing in
the pan, so scrambled it just lightly so that white and yolk are folded
together, but not mixed, but everything is cooked. add salt and pepper to
taste.

Put egg over everything else, enjoy! It was delicious!
