All packaged food has, I believe, the specifications of that food
pre-cooked. Fattier meat will yield less usable food after cooking after
the fat is poured off.

Assuming the fat is removed after cooking, measuring the weight after
cooking gives you a better idea of what you are eating if you weigh it after
cooking. After a time, though, you will kind of "know" what works for you,
and you will rely more on your bathroom scales more than the kitchen scales.
