The trouble comes from the fact that "diet" has two related meanings. 1.
Your regular consumption whether or not you are trying to lose weight is
simply what you eat. 2. Restricting calories with the intention of losing
weight.

For many people, the second definition is the one they always think of and
subconsciously tie it to deprivation AND the thought that someday they
will
be "done" and can quit the diet.

Yes, there are many definitions of diet. From dictionary.com some a

1. food and drink considered in terms of its qualities, composition,
and its effects on health: Milk is a wholesome article of diet.
2. a particular selection of food, esp. as designed or prescribed to
improve a person's physical condition or to prevent or treat a
disease: a diet low in sugar.
3. such a selection or a limitation on the amount a person eats for
reducing weight: No pie for me, I'm on a diet.
4. the foods eaten, as by a particular person or group: The native
diet consists of fish and fruit.
5. food or feed habitually eaten or provided: The rabbits were fed a
diet of carrots and lettuce.

Considering the meaning of "diet" as a whole I have no problem saying
my goal is to be on a healthy diet for the rest of my life. I
definitely don't think of it being as an on again / off when done
thing, and don't feel the need to refer to it as a "lifestyle" instead
of a "diet."

Diets sound good to me.
