Default 1 lb/week ?

Should that be doable. I won't share #'s here except to say i'd like
to lose weight at that rate.

Well, yes. I had about that rate when I lost.

Yet, I'm eating mostly diet shakes, nutrition bars, veggies, fruits,
chicken, the odd popsicle or cookie (rare), that's about it, oh maybe
jello and pasta once a week maybe (bad carbs).

It's not what you eat that matters as such, it's the amount, in
calories. Even if you don't want to weigh and measure every mouthful
(I certainly don't), it helps to get some idea of how many calories
you're eating per day. Balance that with what you burn in the gym and
otherwise and aim for a 500 calorie deficit per day, which amounts to
about pound lost per week. There are tools like fitday.com which make
it fairly easy to estimate these things.

Anyone ? Need to hit the gym every day ? 4-6 hours day past
exhaustion ? Counterproductive ?

Well, you can exercise more or eat less. For the long term, eating
less is easier to keep up than working out a lot. Time restrictions,
illness, injuries and such can make it hard sometimes.

I find that heavy exercise increases my appetite. On the other hand,
moderate weight training doesn't, not that I can train very hard if
not eating.
