I tend to be the one who says "Moo" in response to being fed cattle
fodder. *Being mildly wheat intolerant normally has me one of the most
biased in the room. *Even I figure the current anti-wheat fad is over
blown. *Wheat or gluten is a problem for maybe ten percent. *Low carb is
beneficial for at least fifty percent.

I think most of the benefit of this current fad comes from the wrong
reason. *It's lower carb without being called lower carb. *I bet the
gluten free fad will pass, people will eat cattle fodder again, feel
worse, but because they don't know the actual cuse is total carbs they
won't be able to repeat it.


I agree with that assessment. I see people on TV
that are on the current "gluten is bad" fad. But if
you listen to what they are doing, in most cases
they aren't just avoiding gluten. They are sharply
reducing refined carbs. So, I think they have arrived at
a good solution, but possibly for the wrong reason.
Meaning I'm not convinced if you replaced wheat
with corn or rice flour and made the same refined
carb products that they wouldn't be just as bad
for most people.
