Default REC: Another Way to Cook Chicken

Recipe
Chicken Breasts, boneless & skinless, pounded to about 1/4"
thickness
Cream Cheese Spread with onions & chives (I didn't know they made
this flavored
variety, if I can't find it at the store, I'll soften regular
cream cheese and
make my own)
Bacon
Salt & Pepper to Taste

Its basically this....pound the chicken to about 1/4" thickness
spread cream cheese mixture, about 2 tablespoons per breast.
Fold chicken breast, or roll
Wrap 1 piece of bacon around chicken (secure with toothpick)
salt & pepper to taste
bake in 400 degree oven for 30-35 minutes or until chicken is
done. If bacon
is still undercooked, broil briefly.

I make this type of dish quite often, except I don't pound the
breasts--I never have any luck doing that step. Instead, I
butterfly each breast to open it up, spread it with a
cream-cheese concoction (mixed with pesto or salsa or whatever
sounds yummy), then roll it up and follow the rest of the
instructions. Sometimes I'll brush the chicken with ceasar
dressing before wrapping in bacon, it adds a nice flavor. Serve
with a nice green salad and steamed or roasted veggies.
