Good companion vegetables include potatoes, leeks, onions, and carrots. It pairs beautifully with corned beef, bacon, and sausage. Store the whole head of cabbage in a plastic bag in the refrigerator for up to a week, two weeks if it is fresh from the garden. But remember, the older it gets, the stronger the flavor and odor will be. The looser-leaved Savoy variety should be used within a few days. Cabbage Measures, Substitutions and Equivalents .. 1/4 pound cooked cabbage = 1 serving .. 1 medium head cabbage = 4 servings .. 1 medium head cabbage = about 2 pounds .. 1 pound raw cabbage = 2 cups cooked .. 1 pound fresh = 4 servings cooked .. 1 medium raw cabbage = 4 cups raw shredded .. 1 pound raw shredded = 9-10 servings raw .. 2 pound head cabbage = about 10 cups shredded Cabbage Varieties: There are over four hundred different varieties of cabbage. Red or Purple Cabbage: When cooking with red or purple cabbage, be aware that the compound (anthocyanin) that gives the cabbage that beautiful color will also turn it blue when it is cooked along with any alkaline substance. Since tap water is often full of alkaline minerals such as lime, be sure to add about 1 teaspoon of acidic agent, such as lemon juice, vinegar, or wine, to the pot when using tap water. If your red cabbage begins to take on that blue tinge in any recipe, the addition of the acidic agent will usually bring back the original color. Red cabbage can be used interchangeably in most standard cabbage recipes but be aware that the color will leach into any other ingredients. Recipes that I have, if interested in any let me know. With a few simple alterations, most of these recipes can be considerably lower in calories. I will offer some of these suggestions with the recipe. I have many, many more recipes.
