Cooking Black Soybeans?

Default Cooking Black Soybeans?

I am going to make some chili tomorrow using dry black soybeans. How
long should I plan on cooking the beans? I'm assuming they should soak
overnight.

Default Cooking Black Soybeans?

Dunno about black soy beans, but most beans, if you soak them overnight
and they swell up and start to sprout, that's GOOD. It makes them lower
carb and easier to digest, taste more interesting, etc. But do rinse
them first thing in the morning.

They turn the water a pretty deep shade of purple.

I found this on Eden's site:
"To prepare black beans rinse thoroughly and soak for 6 to 8 hours.
Strain and rinse again, then add fresh water to cover the beans by 2
inches. Boil furiously uncovered for about 10 minutes, skim off any
foam and add seasonings. In addition to your favorite spices we
recommend a two inch strip of EDEN kombu and 1/4 teaspoon EDEN Sea
Salt for each cup of dried beans to soften. Cover and simmer for about
two hours. If using a pressure cooker add seasonings at the start of
cooking and cook for about one hour (or until tender)."

Where'd you get the dried black soybeans? Do they carry them at Whole
Foods and I just haven't seen them?

I bought them from the gal who didn't send my liquid Splenda. I like
them, so I just ordered some from Edenfoods.com in the bulk section.
