This morning's scale said I gained three pounds in a day, to my
surprise. Never seen anything like this since going LC. Stay tuned...

It's mostly water. You could be eating a lot of salty food one day, and
before you know it, you gain 3 pounds because salt causes water
retention. Has nothing to do with fat loss though.

To put it differently: you didn't lose 3 pounds with peeing today.


Take care and don't get discouraged by one day. Draw yourself a graph of
your daily values, then calculate averages for each week and connect the
averages together with a marker. You'll see that you're losing pounds on
average, and that's the important part.

IIRC, it takes 3500 surplus calories to amass 1# fat; therefore, unless you
ate 10,500 surplus calories that day, this weight has to be water. Don't
worry!

Well, that's whatcha get for obsessing over the scale and weighing every day.
Follow the directions and weigh once a week. We all fluctuate day to day, even
hour to hour, several pounds up and down.

Default Need good recipie for Cream of Broccoli Soup



This recipe is DELICIOUS and has been with my family for years! I hope
you all enjoy it as much as we do!!

3T butter or bacon fat
1/2 cup white wine
1 c diced broccoli
1/3 c diced onion
1/3 c diced celery
3 T flour
3 c chicken broth
salt-pepper
1 c 1/2 and 1/2

Melt fat in soup kettle. Add wine and veggies. Sauté 5 min. low heat
Blend in flour - add broth. Bring to boil. Add salt and pepper. Lower
heat to simmer for 45 minutes. Add 1/2 and 1/2. Serve.

Default Need good recipie for Cream of Broccoli Soup

Ingredients
1 tbsp olive oil
4 cups Stock, chicken
3 bunches broccoli, cut into florets, (about 1 lb)
1 medium yellow onions, chopped coarsely
3 cloves Garlic, slivered
1/2 tsp ground nutmeg
Salt, to taste
Pepper, to taste
1 cup Cream
1 tbsp Parsley, minced
2 tbsp plain yogurt, drizzled

Preparation
1. In a large saucepan, heat the oil over low heat. Add the onions and cook,
stirring frequently, for 5 minutes or until softened. Add the garlic and cook
for 30 seconds.

2. Add the broccoli, nutmeg, and stock and bring to a boil over moderate heat.
Adjust the heat so that the mixture simmers gently, cover, and cook for 20
minutes or until the broccoli is very tender.

3. In a food processor or blender, working in batches if necessary, process the
mixture until pureed. Return the puree to the Dutch oven, stir in the cream,
salt, and pepper, and set over moderate heat for 4 minutes or just until heated
through.

4. Place in turine and drizzle yogurt over soup. (It will look like it is
settling, when you server, it will leave beautfull swirl lines in the soup.)
Spinkle with Parsley.
