Default One More Recipe: Breakfast Blintze (filled crepe)

This couldn't be simpler, faster or more delicious. I choose it for
breakfast most days as I never seem to tire of it. I also have some
orange juice as the vitamin C enhances iron absorption from the egg.
Again I am using the pressed cottage cheese that comes wrapped in paper
and then in heavy white plastic. I haven't tried this in a non stick
pan but it should work without the butter if you prefer.

Breakfast Blintze (Filled Crepe)

One large or extra large egg well beaten (add a little water)
1 pat of butter or spray coating for pan
2 oz. of pressed cottage cheese
Cinnamon (optional)
1 teaspoon honey ( optional)

Heat a small skillet, add the butter if using, and swirl egg to coat
pan evenly. When egg begins to set and is less moist on top, place
cottage cheese at one end. Use a spatula to loosen pancake edges and
roll up gently . Cook a little longer to brown it well then roll it
over with the spatula and finish other side. Slip on to a plate and add
topping. Sprinkle with a little powdered cinnamon.

Variations: top with sliced berries and yogurt or diet syrup or warm
the berries with sweetener of choice

Can anyone tell me if this is something one can buy at supermarkets in
the US? It sounds interesting but isn't something I'm familiar with.

Thanks,
Chris

It is available in most large cities. It is called pressed cottage
cheese or you can also use Farmer's Cheese or "Hoop" cheese.

I think in the U.S. Friendship Dairy makes it. I have a list for some
other producers in other areas so tell me what state you are in.

Thanks, Carol! I'm in Virginia. I'm in the suburbs of Washington, DC
so that would work too.

Well, I'll check out where it's sold. It wouldn't be practical to go
to WV to shop, but maybe they carry it in stores around here.

I take that this isn't the same stuff as dry curd cottage cheese? (which
I've only found in one place 40 mi from here).
