Chili originally didnt have meat in it, just beans, because dull beans
absorb the zesty flavors, its a slowcooked cheap meal. Then the
cowpokes on the trail added groundup meat to it and messed up the
original recipes! ;-)
Btw, lean ground hamburger, cooked and rinsed, probably has less
calories/fat in it than ground turky meat. Also beans are a great
source of fiber. I would add a can of black beans too. Ole!

Where did you get this idea? Chili was originally meat, no beans, at
least in Texas. Texas chili is beanless and many people think the idea
of beans in chili is a heresy. Personally I don't see the big deal. I
figure make chili the way you like it and don't worry about what other
people think.

You really set off the flavors if you:

do the browned meat, onions and garlic in a pot with a can of chicken
broth for an hour.

then add the rest, with a can of beef broth, and simmer for 2 hours.

spices, only for the last hour. and chuck some lime juice in there.

damn, i love good chili.... thanx for the reminder, i'm going to do a
batch for a BBQ picnic thing i have this weekend...

And oh yeah! Cumin. You have to put Cumin in there. A couple or 3
heaping tablespoons.

Damn I love chili...
