Default Cucumbers... the fruit of the Gods..

I am so happy that cucumbers are low in carbohydrates, it tastes like a
sweet fruit (technically it *is* a fruit, but hey), like an apple to me
sometimes. I do eat real apples on occasion, but to me, cucumbers are
my favorite tasting "free food".

Just thought I'd share...

I agree with the "free food" part, but they don't taste sweet at all to me.
Now lettuce does, as do "sweet" peppers. I do eat lots of cucumbers though
since getting that weight into my stomach kills off hunger for a while
(until my body figures out there was nothing much there).

I love 'em, too. We have an Iranian friend who has invited us to Naw Ruz
(Persian New Year) for the last couple of years and they always have a
cucumber, tomato, and onion salad w/lemon juice, salt, and pepper. Used to
know the Persian name for it, but can't remember it right now. The veggies
(I seeded my cucumbers and used roma tomatoes and a small sweet onion) are
diced into small cubes and fresh lemon juice is squeezed over the lot. Salt
and pepper to your taste. Don't know exactly how many carbs, but I'm pretty
sure it's not too high. Tastes just like spring!

Cukes were always a fav of mine, even before LC eating. If you haven't
tried this yet...... Sweet and Sour Cukes: thin slice cukes and a little
onion, and put it all into a container with vinegar and splenda or sweet n
low to taste. Let it sit a few hours in the fridge. Wonderful sidedish with
any meat, or snack.

I'm with you there. Right up there for me are red peppers, which aren't
"free foods" but are definitely goodies.

I used to eat whole cucumbers for a snack as a kid. They're so yummy. I love
the texture of the seeds in the center.

If you like sweet, crunchy, juicy, apple-like vegetables, you MUST try jicama.

I've been keeping my eyes open for them, with no luck. Perhaps at Pete's
Frootique (I live in Halifax, Canada) I'll see if they are there, next
time. Do they have any other names?

Growing up with a large family my mom always made cucumber sliced sandwiches..
just add mayo..

kids in the neighborhood always looked funny at us..

should get a loaf of atkins bread and have one............:-)

my new favorite sushi restaurant makes a roll called a "sexy roll,"
which is just three or four pieces of fish (i think salmon) wrapped in
thinly sliced cucumber. they're heavenly.
