Gazpacho
4 large garlic cloves peeled
1 medium cucumber peeled and chopped 1 cup water Puree the above in a blender or food processor. Add 2 pints cherry tomatoes halved or quartered (I pulse a few times in the processor if I'm lazy) 1 cup diced red onion 1 cup chopped red bell pepper 1 cup chopped yellow or green bell pepper 1/3 cup minced cilantro 1/4 cup fresh lemon or lime juice 1 teaspoon salt cayenne, Tabasco or other pepper sauce to taste Mix and chill |
