More carbohydrate from raw vegetables and fruits is
likely to provide significant protection from CHD,
most types of cancers, stroke, macular degeneration,
type II diabetes, overweight/obesity, etc. etc. etc.

Traditional Cretan Mediterranean diet is relatively low carb, only 45% of
calories from carbs, despite including lots of vegetables. Many vegetebales
and berries have low amount of absorbable carbs, so one can eat quite a lot
of them even on low carb diets.

Here some examples:

Plant Absorbable carbs g/100g
--------- ---------------------
Cucumber 1.4
Broccoli 2.0
Radish 2.0
Pumpkin 2.0
Asparagus 2.0
Cauliflower 2.2
Aubergine 3.1
Cabbage 3.4
Tomatoes 3.8
Blueberry 6.4
Blackcurrant 7.5
Strawberry 8.4
