Default Garam Masala

Make your own garam masala! so worth it!!

Will~

Roasted Garam Masala Spice Blend (Garam Masala)
Makes ½ cup

Ingredients:
3 TBSP cumin seeds
3 TBSP coriander seeds
2 TBSP black peppercorns
1 TBSP Cardamom seeds
1 tsp whole cloves
1 (3inch) cinnamon stick, broken into bits
4 bay leaves, broken into bits
1 tsp grated nutmeg

Directions :
Place all the spices*, except the nutmeg, in a frying pan over medium-high
heat. Roast shaking the pan, or stirring, until the spices smoke, release
aroma and turn several shades darker, about 6 minutes.

Turn off heat. Stir in the nutmeg.

Transfer spices to a plate and, when completely cool, grind to a fine
powder.

Use immediately or store in a tightly covered jar.

*Can wait 1-2 minutes before adding the cumin seeds since they cook a little
faster.
