Grain recipes
I love bulgur and pearled barley, I'm not crazy about rice, but am willing
to try. Problem is, I have a few recipes, that I love, but I'd like more. What's your favorite grains recipe? Will~ |

barley mushroom soup, usually do with leftovers, beef stock from the can,
2/3 cans, 2 cups total of any of the following, barley, white rice, brown rice, wild rice, could use bulgur, 2 cans mushrooms or soy crumbles, add beef if you want, and then either tomatoes, tomato juice or plain water... sorry this is so lose but I use leftovers and not whole portions,... also add at the end any leftover pre cooked vegetables from the refrigerator, if you need or want to add them before about an hour for frozen... this started out as beef barley soup recipe I read but I have as you can see changed it as leftovers dictate Lee Willow Herself wrote in message y.net... That spiced barley pilaf you made was so delicious. Why not work on

I make a great side dish using semi-pearled farro...Its made like rice using
low sodium chicken broth (I substitute 2 Tbsp with a red wine)...While it's cooking sauté mushrooms,...onions,...garlic,...celery and carrots in a teaspoon of your oil of choice ( I use EVOO) mix together...Simple yet elegant...I find semi pearled farro much better than rice...Although I use many different types of rice in different recipes...I also have a chard and wild rice recipe which is awesome but not on this computer...I will send later...GG "Willow Herself" wrote in message y.net... Spiced Barley Pilaf was Grain recipes
Spiced Barley Pilaf
6 servings, 2 pts/serving, Ingredients 1 cup pearl barley 2 tsp Canola oil 2 small carrots, diced 1 small red onion, diced 1 celery stalk, diced 2 garlic cloves, minced ½ bay leaf 1 tsp ground cumin ¾ tsp salt ½ tsp paprika ¼ tsp turmeric ¼ tsp freshly ground pepper 1 (14oz can) chicken broth (low sodium if available) ¾ cup of water. Directions 1- Heat a large skillet over medium heat. Add the barley and toast, stirring occasionally, until fragrant, about 5 minutes. Transfer to a plate and set aside. 2- Heat the oil in a large saucepan over medium-high heat. Add the carrots, red onions, and celery; cook covered, stirring occasionally, until softened, about 5 minutes. Stir in the garlic, bay leaf, cumin, salt, paprika, turmeric, and pepper; cook, stirring frequently, until fragrant about 30 seconds. 3- Add the barley, broth, and water; bring to a boil. Reduce the heat and simmer, covered, until the barley is tender and the liquid is absorbed, about 40 minutes. Discard the bay leaf before serving. Stir it up, p.211 |

One is the Blamanger of Chicken on my web site. Mediaeval chicken one-pot meal! And I also like things you serve with rice served either with brown rice, red Camargue rice, or mixed rices that include wild rice. Millet is also good served like rice.
