South Beach cheese substitute?

I've been seeing and reading about all the low-fat,low-cal,low-carb diets
and I like most of what I see in the South Beach because of all the seafood
and fruits and veggies that are in it, however, as with lots of recipes
there is also lots of chees shown in the cookbook recipes. Does anyone know
what is the usual substitute for a cheese product? I hate cheese but am
wondering what I would be able to put in it's place in a recipe.
