Recipe Adaptations
Hello. I'm new to this group specifically and weight loss/low carbing
generally. After my last trip to the docs and seeing my lab results so far over normal I decided it was time. I'm 5'2" and small boned as well so 153 just did not look or feel good on me. I got tired of looking like a fat greek olive whenever I wore black. lol Anyway, I started doing Atkins on Sept. 6 and have lost 14lbs so far. In a stall atm but I'm sure it will pass. The hardest thing has been giving up "real" bread and rice. I know they are no no's at least til I reach goal and can slowly and sensibly add them back. One thing I would like is to find a good low carb Cream of Chicken sub so that I can make my Saturday Chicken recipe. It calls for a can of it in the recipe. At least 3 people here have seen or tried the recipe and its delish. Its a comfort food that I would like to indulge in. I know I can't have rice with it as usual but I have a couple of low carb ideas for subs for those. If anyone knows of a good adaptation for the soup I would greatly appreciate it. I found this on the web: 1 cup Chicken Stock 2 Tablespoons Heavy Cream 1 egg Yolk Wisk cream and yolk into hot stock. SImmer 1 minute. Do not boil. Makes 1 serving 3.3 carbs This is from the Dr. Atkins recipe book. I'm not sure how it would transfer into a can of soup though. I'm also short, 5' 3" and very small boned. I've had a tough year and ate my way from 120 back up to 140. I do modified low carb (I'm a carb crasher), and have been working out regularly for 8 weeks now. 3 x a week on the stepper, 3 times lifting weights. I'll do a little math and see how it turns out. Hmmmmm The recipe I want to do calls for a pint of Heavy Cream to be mixed with the soup and poured over the chicken. /fingers crossed I'll try it this week end maybe. This is prolly a big reason why I'm not losing as quickly as I feel I should be. I do ride my bike some. (not regularly yet. but am going to.) But basically I'm not getting enough exercise. SO is "promising" me that we'll join the Y after the first of the year. For me, exercising by myself is boring. I can't seem to motivate myself wrt becoming more physically active. But even without the exercise I have gone from size 16 jeans to sizes 8 and 10. It depends on the cut. I haven't been able to do that in over 6 years. Not a great loss on the scale, but I feel a ton better and my clothes fit better. And isn't that really the important thing? Good luck Angela |
