My awesome no guilt lettuce wraps
- Live Gourmet Butter Lettuce (see my other post about this)
- A high-end ground beef, preferably cruelty free as available at Nieman Ranch* - Low-sodium bacon - Crumbled Bleu cheese or gorgonzola - Ketchup Cook the bacon and set it aside. Drain most of the bacon fat from the pan, leaving just a tiny bit in the pan. Form the meat into little oblong meatballs, which should be about the size of your thumb after cooking. You can add stuff to the meat like green onion and seasoning to taste if you want. Fry the lil meatballs in the pan you cooked the bacon in. Drain the meet on a paper towel. Peel off a lettuce leaf and break off the stem. Put a dollop of ketchup on the leaf. Fill it with meat, cheese, and bacon. I'm new to low-carbing, and still need to read the book, which is sitting on the shelf waiting for me. So I've just been restricting carbs as much as possible; not eating pasta (easy to resist for me), cutting down on bread (a little harder to resist), etc. I have a terrible sweet tooth, though, and cutting back on sugar has been the most challenging thing yet. |

I'd want something bland in there, to substitute for the bland taste of bread. Maybe some diced tofu, or boiled egg whites. Or maybe a spread on the leaf like cream cheese or a tofu spread. There's a similar Thai dish with no cooking: 'mieung kam', try various spellings. It's various salad type ingredients -- inclluding dried shrimp -- wrapped in a spinich or lettuce leaf.
