Add lemon zest and vanilla. Sift together flour, salt, baking soda, baking

I only know that folks substitute apple sauce or plum puree for oil in
some recipes with some success. Are egg beaters less calories or just
less cholesterol?? And of course there is the sugar. I still have
not tried using splenda at all......

Have fun with my non-informative information. (G)

Applesauce is often used as a replacement for oil, but since this is a Pear
Bread recipe, you might try taking a can of pears in pear juice and pureeing
them in the blender or food processor and replace some or all of the oil
with that. I think I'd try 3/4 cup of the pear puree and 1/4 cup of the
oil, but I'd be tempted for flavor to use 1/4 cup of butter instead of the
oil.

Since the canned pears are very sweet I think you could cut out some of the
sugar, too. With 3/4 cup of pear puree, I'd cut the sugar down to 1 1/3
cup.

Nuts are high point items, too, because of their fat content. Toasting them
adds more flavor, so you could cut the quantity down if you toast them. I'd
try 3/8 cup of toasted pecans.

Speaking just for myself, I'd sub some of the white flour with whole wheat,
too -- but I prefer whole wheat even ignoring the health benefits.

HTH == Let us know how it comes out whatever you do.!

replace 1/2 cup of sugar with splenda
replace eggs with egg beaters
cut nuts in half and instead of mixing them in crush them and sprinkle on
pan before you pour in batter
you could also probably cut the oil to 1/4 cup of a cup.

forgot about the apple sauce, you can also use canned pears and mash it up
instead of the apple sauce. I didn't say to substitute all of the sugar
because it doesn't brown like you would like if you substitute it all, Lee

I misread the oil amount, I would cut at least 1/3 cup of it off the start,
