Years of GERD-like gagging on healthy low fat white chicken breasts
have finally pushed me to the dark side. Since using less red meat these days, the rationale is that dark chicken is still leaner than beef. Try browning (with or without oil) a few chicken thighs with onion and garlic. Transfer them to an earthenware casserole dish and add simmered down tomato juice, cut squash or carrots and a dash of wine, cover and allow to languish in a 300 oven for a couple of hours. This tastes even better the second day and has high satiety. If you've used skin on thighs, discard the skin.
