Default Pot Luck Advice Needed

I was wondering if any of you have advice on what to bring to a
departmental pot luck. I figure I can eat lunch at my desk either
before or after this one of a kind event but it really frightens me that
people have signed up to bring such delicacies a "an assortment of
potato chips." I feel like this is a no win situation...

Last year it was all store bought junk food (who wants store bought
Christmas cookies?) so it's not going to be hard to pass up these
"treats." I guess I don't want to be put in this position. I feel that
I have to attend. sigh Oh well, it'll probably be better than work.

not sure how well it fits into your woe - buy my favorite potluck dish is my
home made pasta salad. I cook up the tri colored pasta. (or you could try
it with a wheat pasta or pasta alternative and see how people like your
"healthy alternative).

I add in
Tomato
brocolli
cauliflower
carrots
celery
cucumber
(insert other veggies if you like, I generaly leave out onions and colored
peppers because alot of people don't like them).

I'll also add in seeds/nuts like shelled, unsalted sunflower seeds. You
could add in some soy nuts or something.

I'll add in diced cheese, like a chedder/jack or pepper jack. Or just
parmassean cheese.

And for meat: diced grilled chicken, turkey, or pepperoni. Or of course a
deli assortment could also work. Make it liek an "antipasta" w/ the rolled
deli meat and chese sliced up.

And topped w/ just a simple Italian (or ceasar) dressing of choice. I
usually go lite on the dressin gin the bowl and provide an extra container
on the side for people to embelish if they like.

That - w/ the meat and all, can be an "all in one" meal and you can eat that
without anything else too.

Provide your co-workers with healthy alternatives. Believe me - if your
office is anything like mine, you aren't the only one that is worried about
the food.

I'm bringing a fruit plate with a low fat yogurt dip to our potluck next
week. I used to always make a fruit pizza with a sugar cookie crust. I had
imagined an oatmeal crust made w/ splenda and substituting lf cream cheese
for the full fat version (the icing), but I'm crunched for time and need to
go very simple this year.

Eat your healthy lunch at your desk, go and have fun.
If anybody was smart enough to bring a fruit plate, you
can always indulge.

I usually sign up to bring a big salad--lots of fresh vegies and
all the extras to add as-you-like. That way I can partake in the
luncheon without falling off the wagon, and there's a healthy
choice available to everyone. A crockpot of homemade soup also
goes over well. Perhaps you'll inspire your co-workers to try a
little harder next time...

My usual contribution to things like this is a couple of packages of
Trader Joe's chicken sausages, cut into slices (it's precooked -- good
cold) with a few assorted gourmet mustards.

The last place I worked pot lucks were like that. What's the point of a pot
luck if I'm the only person who cooks?

Fortunately, now, I work with folks who are pretty good cooks, so the pot
lucks are decent.
