Fresh Onions, Garlic and Green Beans work for me. Broccoli or cauliflower
or zucchini slices might also be nice. |

. .. I used to do pot roast with onion soup mix, potatoes, carrots and onions. Tonight I made one with nuthin' - just the beef w/some pepper and garlic powder and I only used water (not broth or wine or anything) It tasted really good - I was surprised, thought it would be blah. In the last 1/2 hour I did throw in a handful of baby carrots and they were tasty. What veggies would you/do you put in a pot roast these days? Radishes! Radishes are the #1 thing I put in with my pot roast. Larger ones I will cut in half or cube, but mostly I just put them in there whole. They look kind of like small red potatoes. Actually, the first time I did it, my non-lowcarb eating husband thought they WERE red potatoes (this is after he ate a plate with a pile of them on it). He hates radishes, but he sure liked them cooked this way. So radishes, celery, onion, baby carrots, mushrooms... that's what I add to my pot roast. Very yummy. |
