As to what to put it on...that's another issue entirely. There are various
LC pancake recipes around, but they may not be appropriate to introduce into
your program now.

Cottage cheese? Scrambled eggs? I used to eat jam on scrambled eggs.

ok....I was concerned because when netrition says "sugar free" they almost
mean sugar alcohols, too. This 'calorie free' stuff is devoid of them.
Less likely to slow weight loss if there are NO calories, perhaps.

I keep a loaf of Weight Watchers whole wheat bread in the freezer for
occasions like this. It's pretty low-cal/low-carb - mainly because the
slices are so small.

Anyway, I use it to make French toast. One beaten egg, a splash of
cream, some cinnamon. Serve with butter and ED Smith sugar-free
pancake syrup.

Oh, and BACON.

How 'bout cream cheese pancakes?

Take 4 egg whites & beat until stiff; set aside. Then beat 8 oz. of
softened cream cheese with the 4 egg yolks until smooth. Blend in a
tsp. of vanilla, 2 T. Splenda, and 1/4 tsp. or so of cinnamon. Fold
in the egg whites and leave for about 10 minutes before cooking them
up...

I've had better luck using a hot skillet than an electric
griddle...and definitely better luck making the pancakes dollar size
rather than plate-size...the pancakes are pretty delicate. Very
yummy, though.

You can make the batter ahead of time and refrigerate; great to take
along on camping trips.
