faux queish
I made this up for dinner.
1 16 oz bag frozen collard greens, thawed in microwave so you can mix it, chopp into bite sized chuncks. 1 box frozen creamed spinach, we used the green giant one i think it is either 7 or 9 oz. again thaw. 5 oz ff cheese shredded. 1 Cup egg beaters. 1 small can mushrooms drained. mix vegetables and 2/3 of the cheese, put into shallow baking dish. pour over egg beaters and top with remaining cheese, bake on 350 until eggs have set and cheese is melted... spray the cheese on top with olive oil to help it melt 4 servings is 3 points, 6 servings is 2.
