All commercial ice creams have a very specific amount of air incorporated into them. This is called the "loft" or "rise" and is necessary to avoid a greasy mouthfeel. Too much and it feels to light. Homemade ice creams have the air incorporated by the dashers in the various kinds of makers, too. Pastorio |

The textures you reported seem to me to be similar to an ice cream that's been improperly handled. Perhaps thawed & refrozen? Left too long in a "frost-free" freezer? Poor production quality on that batch? Hard to say... I bought the LC ice cream to test. My slender 12-year-old daughter bought the FV. I tasted the LC as soon as we arrived home. It felt fake then. Almost foamy. Very soft and light on flavor. It was disappointing. Obviously, the transport time and raised temperature didn't do well by it. After a couple days in the freezer, I tried it again. Firm, solid. Flavor seemed somehow to have intensified; can't explain it. Today, it was fine. Compares very favorably with their top-of-the-line French Vanilla. Stood up well in side-by-side tasting. Live your dreams. Tried the strawberry and vanilla tonight. Not a single strawberry chunk in it and did not like the texture very much either. The vanilla was much better but why are the calories so high 130 calories per half cup. I was hoping for more like 80 or 90 calories per half cup. Dick |
