Tomato juice and diabetes

Default Tomato juice and diabetes

Hi, all,

I recently read an article that said that 8 oz daily of tomato juice
resulted in decreased platelet aggregation in diabetics. (I'm diabetic.)
It *might* be the lycopene, but they tested the whole juice, so that's what
I'm drinking.

The trouble is that I *hate* tomato juice. I also hate tomato soup and raw
tomatoes. I like ketchup and pizza sauce well enough, but as you can
imagine, it's a little hard to get the whole 8 oz that way.

So my question is this: how do you make tomato juice palatable? I've been
adding a little toasted sesame oil, which goes well, but does anybody have
a suggestion as to how to make it better?

So far, I've been just holding my nose and chugging it, then brushing my
teeth.

You could try cooking with tomatoes. There are several casserole-type
recipes I know of that call for tomato sauce that gets poured over the
hamburger. And lasagna uses tomato sauce. Plus there's spaghetti sauce you
can put on spaghetti squash or zucchini strips.
8 ounces daily... good luck to you. Glad it's not me.
Actually, I adore ketchup, always have. Although it's now a little sweet
for me (the splenda-sweetened ketchup) so I like to cut it with tomato
sauce.

If you like the flavor of pizza sauce... have you thought of simply adding
some spices to your tomato juice? Like adding basil & oregano, and perhaps
a little splenda?
I know that back when I ate more carbs... if we had a yummy maranara-type
dipping sauce, after eating up all the breadsticks or whatever came with the
sauce -if there was extra sauce, I'd drink it cuz it was yummy.

Bloody Mary? Hot sauce and vodka, you could leave out the Vodka, that's a
Virgin Mary. Wish I could drink it for you, I love tomato juice. How about
V8? Mainly tomato with some other veggies in it.
