Lady Rose Relish

5 Cups ground cucumber
4 Cups ground onion
3 Cups ground green and red peppers
9 Cups ground cauliflower

Mix them all together in a large pan. Sprinkle 1/2 Cup coarse salt over top
and let sit 5 to 8 hours. Drain well.

Broth

4 1/2 Cups white vinegar
6 Cups Splenda
Bring to boil.

In a jar, put

4 Tbsp dry mustard
2 tspn mustard seed
1 Tbsp turmeric
2/3 Cup Soy flour
1 Cup vinegar

Shake very well to avoid lumps.

When vinegar and Splenda come to a boil, start adding jar contents until it
begins to thicken, then slowly add the drained veggies.

Bring to a boil only, and ladle into sterilized jars.

This makes about 10 pints, so you might want to halve the recipe.


This has to be the best hot dog relish ever. If you make the whole thing,
it's about 3 large English cukes, 2 lbs of onions, 2 each of the peppers and
a large head of cauliflower. Putting the works through a meat grinder makes
a nicer texture, but you can use a food processor , just don't liquefy it.

The Old Boot's been tweaking a few pickling recipes with Splenda, and so
far, they're coming along great. Anybody into bread and butter pickles or
hamburger relish?
