If you're planning on pit stops and eating every 3-4 hours, then you
won't need car snacks.

Do you eat more than every 3 hours when you're not in the car?

Stop at places to get real food!

Of course I intend to stop to eat!!! I'm planning on pitstops at 3 - 4 hours,
that's why I asked about snacks.

get yourself a hard-sided cooler - some are very small
( the size of a 6 pack ) - they rarely leak and take up very little space -
take hard-cooked eggs, cheese cubes,
jerky, nuts, and even some berries if you tolerate them -
personally when I travel I use the cooler to make sure I get
enough water when in the car - if you are concerned
freeze some bottles of water & use them as "ice packs"
or the double zip lock system in the hard cooler works
well- no soft sided cooler I have ever owned didnt fail
at some point- either by leaking or not keeping the food
cold - we travel from NJ to florida in Mid summer with
the cooler in the car and had Ice all the way -

We're headed on an 8 day road trip this October, from NJ to FL with
stops along the way. I'm looking for some snack ideas, since I don't
have a fridge in the car (!), cheese and anything perishable is a
no-no. I'm thinking nuts, maybe some peanut butter, and my usual
frankensnack per day, any other suggestions?

If you have room in the trunk for a small ice chest or cooler, you can keep
cheese in the car for a couple of days. I did this on my last vacation to
Arizona - in June! - we bought a $10 styrofoam ice chest from Target and
kept it in the trunk of the rental car. We picked up a fresh bag of ice at
a convenience store every day or so. We were able to keep cheese and cold
water handy the whole time, as well as preventing the protein bars we had
from becoming a gooey sticky mess.

big tub of lard

Hmm, doesn't sound too practical, Billy. The lard would tend to
melt in a hot car, and it's not too appetizing to eat just by itself.
Though since you're always such a kind and supportive person, perhaps
we should reconsider your advice. Do you eat your lard by the handful
like yo' mama?
