Default Veggies

Because of my hectic life, I don't often take time to eat enough veggies.
Today I bought celery, baby carrots, broccoli, cauliflower and sugar-snap
peas and some ziploc baggies. I divided everything up into five bags. I'm
going to eat one each day at work. Voila. Veggies.

Any other ideas on how I can get some fast veggies into my diet?

One suggestion: punch some holes in the ziploc baggies so there's a
little air circulation. Otherwise your veggies will get mushy by the
end of the week. Ziploc used to make baggies with tiny holes in them
especially for this purpose, but I don't think they're on the market
any longer.

You and me both. Quick and dirty solution: V8 juice (comes in many
varieties - low salt, lemon, spicy, etc). 7 minute solution: buy a
mix of frozen veggies. I like Acme brand Fiesta blend. I take half
of the one pound mix, put it in the microwave for seven minutes - then
add spice. 1/2 pound = 150 calories, 10 grams of fiber. I then add 2
tablespoons of olive oil to make one of my 400 calorie meals.

This won't help with taking them to work, but I just bought a new batch
of Evert-Fresh bags. In my area (central TX), Albertsons sells them.
They're green bags sold near the produce section. They neutralize
the gases that make veggies go bad, so vegetables kept in them last
about 5 times as long. I put half a cucumber in one, and forgot about
it for a couple of weeks. When I pulled it out, it looked like it was
cut yesterday. They can be washed out and reused many times before they
lose their effectiveness.

With these, I can stock up on asparagus when it's on sale, and not worry
about having to use it right away. Around here, half the time broccoli
or green beans in the stores look good, and half the time they look like
they were left in the sun to wilt before going on the shelf. With the
Evert-Fresh bags, I can buy more when they look good, to last me through
when they look lousy. Neutralizing the gases does produce moisture,
though, so I put a couple of paper towels in the bottom of the bags.

The large size bag will fit over the top of a large mixing bowl of salad,
to help keep it from going brown or slimy in the fridge.

These sound like something I can really use. I just ordered some from
the web, since I don't know if local stores carry them. Thanks!

In the UK Lakeland sell these as "Stay Fresh" bags - they really work too
