Anyone ever tried a dessert omelet? They're a very old-fashioned dessert and
not bad. Sweeten the eggs with splenda and vanilla or any other extract that
you like. Depending on where you are with carbs, you can add a variety of
fillings. Strawberries are good if allowed. Cream cheese or ricotta. LC
cannoli filling works great. I like it for breakfast as well with cinnamon,
vanilla, splenda and a little salt. LC syrup and sausage on the side. It's
very much the same as french toast.
You get the idea.

When I was a kid we used to eat jelly omelets. As an adult I realized I didn't
care for them, but I liked them as a kid.

Zowie! I bet this can be made to simulate a cheese blintz (one of the
things I really miss).

Pizza is the other...

Why do you miss pizza? I make a tasty pizza with low carb tortillas, a
couple tablespoons low carb pizza sauce, lots of mozzarella and topped with
pepperoni. I've lost over 50 pounds eating what I want, including pizza,
just make it a different way. There are numerous recipes on this newsgroup
and on the Internet, many of them are very good

Would you cook that flat like a crepe? I have been thinking of
doing that, adding a blintz filling, and making a blintz casserole
I have seen. Do you think that would work--and that you could do
any sweet crepe with a dessert omelet?

Absolutely. You can cook thin ones, slide them out of the pan and let them
cool. There more delicate than crepes so handle gingerly. Play with it and
let us know what you come up with!
