Default How do I restart?

Just start eating food that contains no more than 80-100 carbs/day. You can
probably do this easily by just omitting bread, pasta, potatoes and sugar.

You don't need permission from anyone to change what and how you eat. Just
do it.

Just off the top of my head, I'd recommend looking at what you're eating
now and determine what the high-carb things are. Then cut down on, or out
completely, those things. They'll probably be bread, pasta, potatoes and
anything with sugar. Also watch what fruits you're eating. Switch to
berries and rhubarb. You can generally find them year-round in the frozen
foods section.

You want to know how to eat low carb and not be in ketosis? You want to
eat 80-100 carbs a day. What's there to know? Count carbs to 100 then stop.
I don't understand your problem?
