rec: Creamed Spinach
Here's the creamed spinach I have made for years. I am happy to
say it fits into this WOE nicely. As I was finishing up tonight's portion, I was musing that bacon fat might be an interesting substitute for the butter. Too bad I didn't think of that earlier. I'll give the total carbs off the various containers. BTW, the spinach label said 2 g carbs per serving, 2 g of which were fiber and 1 g of which was sugar. Interesting... Creamed Spinach 10-oz pkg frozen chopped spinach, cooked (or thawed) and squeezed out (7 g [7 fiber and 3.5 sugars}--but see above!) 1/4 c sour cream (2 g) 2 Tbsps butter 2 tsps prepared horseradish ( 2 g [ 1 tsp is 0 g, sooo...] 1/2 tsp tarragon salt to taste (start with 1/4 tsp) pepper to taste Combine all ingredients and heat til hot, stirring. -- Jean B., 12 miles west of Boston, Massachusetts, USA |

Have you ever tried it with cream cheese??? I used to take drained spinach, place it in a casserole dish with a layer of cream cheese and bake it at 350 for about 30 minutes. Pretty good. Chris B. |

You just put the cream cheese on top of the spinach? Hmmm. Visions of sprinkling with parmesan cheese. Also visions of spinach with goat cheese. I think next time the spinach is going to contain some bacon and/or bacon fat too.
