Recipe:Moroccan Chicken
BlankMoroccan Chicken
1 Tb. paprika 1 1/2 tsp ground cumin pinch of cayenne pepper (or more if you wish) 8 chicken thighs (with skins attached!) s & p to taste 1/4 cup olive oil 3 cloves garlic, minced 3 Tb fresh lemon juice chopped cilantro for garnish (optional but good) Mix paprika, cumin and cayenne pepper. Arrange chicken in baking dish and sprinkle with salt & pepper. Rub paprika mixture onto chicken pieces. Whisk together oil, garlic, lemon juice and pour over chicken, turn pieces over to cover completely. Marinate several hours or overnight in fridge (I marinated about a half hour as time was short and it still came out good). Preheat oven to 400 degrees. Roast skin side down first for about 20 mins, turn, and continue baking about 20 mins more minutes til skin is crisp. Garnish. I don't know the carb content of this dish (spices plus the lemon juice do contribute to the carb count), but it's quite a tasty dish, good enough for company, I think. |
