I bake my eggs to make them hard. This takes a while, but I can get 4 meals from a dozen eggs. One can of makerel is basically one meal. Eggs, in this regard, are cheaper. -- Bob in CT |

Mark By fresh do you mean non cured? nope....I have dabbled with curing pork a few times. made peameal bacon etc...I'd presently like to get some nitrate cure, when I do I'll do a large picnic then smoke the thing in my smoker. My Easter ham was just a generic cheap ham...I scored the skin criss-crossed, added 2 qts of cider, a cup or two of brown sugar ...cover tightly and cooked at 200degrees for 12-16 hours, turn and/or baste a few times...when tender but not quite falling completely off the bone(it is supposed to look like a ham when done)......drain the now doubled liquid(you have removed much salt and have both sweetened and concentrated the flavor of ham)......drizzle ham with maple syrup real and/or imitation and roast uncovered at 200-250degrees for 1-2hrs..... one year I added cloves, bad idea since after 16hrs of cooking I didn't have a ham but rather a giant clove, still edible but not to my liking, no cloves at all now but if I did the last hour would work..... Incidentally Good Eats is the best....Soggy |
