She is making zucchini risotto with sun-dried tomatoes and classic
roasted vegetables. The risotto is 7 points and the vegetables, which
we'll have on top of spring mix, is 2 points because it is a large
serving. We are growing the eggplant and squash so that is why she
decided on these for tonight's dinner. She is making 1.5 times the
risotto recipe since we are serving our family of five. We are not
vegetarians but it is a vegetarian meal.

Sometimes it's nice to go veggie just for a change!

I did chicken, cooked with veg in a bed of noodles. 6 points a portion.

DH would rather die than give up meat, for me I could preference wise, give
it up but I seem to need it to lose good at all, I also love anything that
substitutes for meat, Lee

We're not vegetarians either but do at least one meatless dinner a week.

I
do an entire meatless day.

I tried the roasted garlic one yesterday - didn't like it - I threw out the
whole box

I still have a package of regular that I may try again - I don't think Bocca
burgers are going to become a favorite of mine

This post perked my interest. I was thinking of trying Bocca burgers again
as I did about 5 years ago. Now I remember that they were so bad I
couldn't eat them and like you I threw them away.

Some varieties are better than others. I like the All American. It is really okay grilled.
Cannot stand the vegan original or many of the others. I tend to use those when I don't have the calories/points for real hamburger, or cannot find organic meat. If I eat one, I either grill it or fry it in a tsp of olive oil which helps some, then I add a lot of interesting things to the bun, that have flavor. Maybe a few jalapeno's, maybe a few olives.

Boca burgers I used to eat them quite a bit...Great right out of the toaster
on a whole wheat bun...I was a vegetarian then and have since given them
up...I'll get some...The new variations might be interesting...I think its
an acquired taste...Like greasy sliders (White Castle Hamburgers) or Gefilte
fish...GG

if you can't eat them as a sandwich try putting them in chili or soup so you
don't have to throw them out, also my cats like some of the flavors, Lee
