Default Low carbing in Hawaii

I am a diabetic on an under 75g carb diet. I will be
spending 3 weeks in Hawaii next month.

Are there any Hawaii residents out there that can recommend
foods (good and bad) and restaurants that are low-carb
friendly. I'm going to try to visit 4 islands.

The Kamikaze Downhill bike tour from the 13,796 foot Mauna
Kea volcano is my main interest.
