recipe, leftovers accident gone Gold!
I have all this grapefruit from DD's trees. This area has some of the
sweetest grapefruit in the world when it is left to tree ripe. So I am thinking, how can I use some of that in lunch? Had leftover garden salad (a bunch with all kinds of interesting greens) from yesterday. Also left over kernel corn, black olives and some nice sliced honey roasted almonds. I had some atlantic salmon filets in the freezer. I thawed those, mixed up a dressing of brown rice vinegar, soy sauce, a little peanut oil, a little sesame oil, some brown sugar, and splenda. Made a marinade of sugar, splenda, soy sauce and allspice and plopped the salmon in there. Added a sprinkle of sesame oil to that too. Fired up the George. peeled and sectioned a grapefruit and the juice that dripped off that I added to the dressing. Grilled the salmon, put the salad on a plate, added the grilled salmon on top and the sectioned grapefruit and dressing. Oh My Yum City. This one is a keeper.! |

I almost forgot, anything you make with mandarin oranges can be substituted

Ummmmm, I'm gonna take your word on this - even if I don't totally believe it. I
am one that hates grapefruit, but loves mandarin oranges ... so think I will stick with the oranges. G Also, be careful when making this substitution. We were totally unaware until reading several articles .. if you are on some blood pressure medications, you should not eat or drink anything with grapefruit. I seem to recall that grapefruit makes the medications ineffective. A friend of mom's told us that she is on some type of meds that prevent her
from eating grapefruit. It does say right on her meds from the pharmacy not to mix with grapefruit. As a result she gave us 8 gorgous grapefruit from her neighbor's tree. Fresh picked juicy red grapefruit. I love them. About the size of large orange so I can easily eat one for lunch. Small enough to count as 1 point. "Joyce" wrote in message ...
