Default REC: Ground beef

Looking for ideas on different ways to cook ground beef....I already
do taco salad sans shell, hamburger steaks, and meatbals sans
breadcrumbs. I have a lot of this in the freezer and am sort of bored
with the menu.....

Any good and tasty ideas out there?

I brown the beef and remove it from the pan... then I take a bag of
shredded cabbage and sliced mushrooms... add a little chopped onion...
and sautee it all with garlic, salt and pepper.

Put the beef back in and stir in some sour cream.

It's very beef stroganoff-y

Neat! I think I will add the cabbage to the atkins stroganoff recipe I
normally make!

I had to google for this, because I'm still using Crash's computer,
and my recipes are on mine. Instead of oatmeal, I would now use flax
meal. That will lower the carb count, but I can't tell you by how
much. I have 3 pounds of hamburger in the freezer. I should thaw it
and make a batch with flax.

If you love Ukranian food, like me, then try using ground beef in cabbage
rolls. If you don't think you have time to make cabbage rolls (they are
very time consuming, and I barely ever make them), then try making lazy
cabbage rolls. I make them all the time. All you do is fry up the beef (I
prefer ground pork myself), add shredded cabbage, a little bit of onions,
garlic, sauerkraut (if you like), and then once everything has been cooked
down a bit, add some crushed tomatoes and tomato paste. Bring it to a boil
and then let it simmer until the cabbage is softened. But you have to like
Ukranian food for this! Ha, ha.

One I found on the net, which I "carbed down"...

2 pounds ground beef (or turkey)
2 zuchinis
2 green bell peppers
4 green onions
4 oz shredded mozzarella cheese

Slice zuchini and layer in the bottom of a greased baking pan.
Chop green onions and bell peppers.
Brown the beef in a frying pan, and add peppers and onions as it fries. Add
desired spices (I use garlic powder, basil, and fresh ground pepper).
Spread beef mixture over the zuchini, top with the shredded cheese.
Bake in oven at 350 for about 40 minutes.

This is so easy not even I can mess it up.

The first time I did it, the net weight of the meal was 65 ounces, total
calories around 2390 and total carbs around 22.6. I tend to do everything
by the ounce right now, so I can weigh my portion sizes and get a good idea
of what I'm eating. So, per ounce, this meal has about 36.8 calories and
about .35 carbs. For a good-sized serving multiply that by ten.

Here's one, watch out for the substitutions.

Meatball Souvlaki (from Canadian Living Magazine)


1 cup (250 mL) Plain low-fat yogurt


1/2 cup (125 mL) Grated (unpeeled) English cucumber


1 Clove garlic, minced

1/4 tsp (1 mL) Dried mint
Pinch Each salt and pepper

4 Greek pita breads, warmed

*insert lettuce/low carb wrap of your choice*


2 cups (500 mL) Shredded lettuce


2 Small tomatoes, chopped


4 Thin slices red onion


MEATBALLS:


1 Egg


1/4 cup (50 mL) Dry bread crumbs

*I use ground pine nuts*

1 tbsp (15 mL) Dijon mustard


1/2 tsp (2 mL) Dried oregano


1/4 tsp (1 mL) Each salt and pepper


1 lb (500 g) Lean ground beef 500



Preparation


Meatballs: In bowl, whisk together egg, bread crumbs,
mustard, oregano, salt and pepper; mix in beef.

Roll by heaping tablespoonfuls (15 mL) into 24 balls; place on greased
foil-lined rimmed baking sheet. Bake in 450°F (230°C) oven for 15 minutes or
until no longer pink inside.

In bowl, combine yogurt, cucumber, garlic, mint, salt and pepper; spread
over pitas. Sprinkle with lettuce.

Divide tomatoes, onion then meatballs over half of each pita; fold remaining
half over top.

More Information


TIP: Greek pitas don't have pockets; if they're unavailable, put the
filling in the pockets of regular pitas.

Nutritional information


Per Serving: about 476 cal, 34 g pro, 16 g total fat (6 g sat. fat), 48 g
carb, 3 g fibre, 115 mg chol, 682 mg sodium. % RDI: 19% calcium, 34% iron,
8% vit A, 20% vit C, 48% folate.

Indian Spiced Beef Koftas
Yield: 4

Ingredients:

Indian Spiced Beef Koftas


2 tbsp minced ginger, root
2 cloves garlic, minced
1 jalapeno pepper, seeded, and, minced or 1 hot green chili pepper,
seeded, and, minced
2 tbsp vegetable oil
1 egg, yolk
1 tbsp cornstarch
1/2 tsp salt
1/2 tsp turmeric
1/4 tsp ground coriander
1 lb. lean ground beef

Directions:


Indian Spiced Beef Koftas
In large bowl, stir together ginger, garlic, jalapeño, oil, egg yolk,
cornstarch, salt, turmeric and coriander; mix in beef until blended.


Divide into 8 portions; shape each into ball.


Thread 2 balls onto each of 4 metal or soaked wooden skewers; squeeze
each into 3-inch (8 cm) sausage shape.


Place skewers on greased grill over medium-high heat; close lid and
cook, turning skewers once, for about 15 minutes or until koftas are
lightly browned and no longer pink inside.
