ground beef recipes?
Ugh! I am sick to death of ground beef. Not that we eat it that often, but
when we do, it's always so bland. And guess what's thawing for dinner? What the heck can I do with it that won't be horribly fattening but relatively tasty? |

Something we like -- though we use ground turkey -- is to mix some browned meat with spaghetti sauce (bottled, from the grocery) and serve it atop spaghetti squash. The idea is to use lots of the squash and not so much meat and sauce. It's very tasty; we actually prefer it to pasta. Something DH does occasionally is to brown up a bit of ground meat with some onion and spices, and serve it atop a baked sweet potato. Sounds weird, but it's good :-). You can use unusual spices here, like cinnamon and/or curry. Or make chili, with lots of beans relative to the quantity of meat. You can add lots of spices so it won't be bland :-). The basic idea in all these is to cut calories by not just eating ground beef, but instead using it to add flavor to a dish with other healthier ingredients. Chris 262/130s/130s |

I like a simple chili. In a big skillet, saute a pound of ground beef with
a diced onion, some garlic, and a diced, red or green bell pepper -- and a fresh jalepeno if you have one. Drain off the fat. Add a teaspoon or so of chili powder (or a tablespoon of the milder, pre-mixed chili concoctions like the "Mexene" brand), a teaspoon of salt, and half teaspoon of powdered cocoa (optional). Throw in either (1) a can of kidney beans and a little can of tomato sauce or (2) a can of pork & beans. Heat through. Serve with salad and saltines (I have recently discovered whole grain saltines and I love 'em -- never did like regular saltines). Can you get Dale's sauce where you live? It's in a bottle, on the shelf with the BBQ sauces. It's mostly soy sauce and garlic. Mix some Dale's and some finely diced onions up in your ground beef, shape into patties, then grill them over a HOT fire or broil. ep "determined" wrote in message news Ugh! Mix 1 tablespoon each garlic powder (not salt), onion powder, black pepper, oregano, thyme, paprika and, if you can stand it, cayenne, otherwise reduce the cayenne to 1 or 2 tsps. Mix into the meat. I garontee it won't be bland. |

Porcupine balls are mixed with rice, making the porcupine look (rice sticking out of balls) Could be "hairy balls" but I don't think that would be very appetizing. |

Almost all the other ground beef recipes include strong spices or gravy so ground chicken or ground turkey easily substitutes. Form the ground beef into a patty, add a little McCormick or Mrs. Dash extra spicy seasoning and grill it. Serve it inside a whole wheat bun with lettuce and tomato.
