In Need Of a Cabbage Soup Recipe
I Need a good low carb cabbage soup recipe. Anyone have one they have tried

In Need Of a Cabbage Soup Recipe
I have a low carb garden vegetable soup using cabbage and you can add the
sausage as well. I change my recipe around and add broiled shrimp and some cajun seasoning for added flair. 2/3 c sliced carrot 1/2 c diced onion 2 garlic cloves minced 3 c fat free beef, chicken, or vegetable broth 1 1/2 c diced green cabbage 1/2 c green beans 1tbsp tomato paste 1/2 tsp dried basil 1/4 tsp dried oregano 1/4 tsp salt 1/2 c diced zucchini 1.In a large saucepan, sprayed with Pam, saute' the carrot, onion, and garlic over low heat until softened, about 5 min. 2.Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer, covered, about 15 min or until beans are tender 3.Stir in zucchini and heat 3-4 minutes. Serve hot. Per serving: 42 calories, 0 g total fat, 0 g saturated fat, 0 mg cholesterol, 63 mg sodium, 8 g total carbohydrate, 2.4 g dietary fiber, 3 g protein, 41 mg calcium. Change it around to taste. I'm really not sure since I have never made it, but I would guess any of
your smoked sausage or something like the Polska Kielbasa would work just fine. I would cut it into chunks about an inch thick and cook them along with the soup. If anyone else knows a better way, please add to this. We all need to help each other make it in the low carb lifestyle. Whatever makes it easier and more bearable. The key is to keep it interesting and not burn out like I have on bacon, eggs, and sausage! I think I dream about it now, you know, like a nightmare! "ToolPackinMama" wrote in message ... In Need Of a Cabbage Soup Recipe
I made up my own recipe. Ran an onion thru the slicer in my food processer plus
a couple of garlics. Braised them in a little olive oil in a pan with a cover. Meanwhile, sliced up a cabbage (removing the thick stem part) and opened a can of chicken broth. Simmered cabbage and broth with the onion etc until tender. Added a couple of tablespoons of vinegar, a tablespoon of Splenda, a pat of butter. If you happen to have one on hand, a couple of slices of red pepper (red GREEN pepper) is nice added to the onion. Salt and pepper as liked. Nan, Type 2 |

I have a delicious soup recipe given to me by a friend, haven't yet tried
low carbing it but I think it would be fine if you just leave the beans out and change the sugar to Splenda, or leave it out entirely which is what I do as my SO doesn't like sweet foods. This is one of his favorite soups but I'm sure he will like it without the beans, too. Sausage Soup Ole' 1 lb. smoked sausage (cut in 1 in. slices, or diced, as you prefer) 1 can (14-15 oz.) stewed tomatoes 1 can (14-15 oz.) sliced or diced tomatoes in juice 1 can (15-16 oz.) pinto beans, undrained 1 can (14 oz.) chicken broth 1/2 of a small head of cabbage, chopped fairly large 1 Tbs. chili powder 2 tsp. sugar 1 jalapeno pepper, seeded and minced (more if you wish, but not more than 1 extra,or you kill subtle flavors in foods) 1 medium size onion, chopped 2 cloves garlic, minced Put all ingredients in soup pot. This will look to thick to be soup, but will become less thick as cabbage cooks down. Lower heat and simmer from 30 to 60 minutes, depending on how soft you prefer your cabbage.
