i've been on atkins plan for about 4wks now and i'm *VERY* interested in
finding a bread recipie that can end up as sliced bread that is decent
tasting, low or no carbs, and most importantly, is able to withstand being
used to make sandwiches!!!!

Bread machine recipies are preferred cause that's the only way to fly.

on another note....

th atkins book indicates you can have such-n-such amount of something, and
even tho the carbs are low enough, it talks like you're not supposed to
have more even tho having more would not violate carbs.

examples...

cheese. book says 4 oz a day, but if carb level is under limit is more ok?

green olives. book says 20 a day is ok... more is not

but if carbs limit is not exceded then is it ok to go over the 20 / day
number?

splenda book says only 3 packets a day, yet carb limit is ok even with 6
or 8..

is it ok to go over the book recomendations as long as carb limit is not
exceeded?

Thanks for your answers

more questions to come i'm sure....

It all depends on whether you are a "low carb" dieter or an "Atkins"
dieter.

I am a "low carb" dieter, I eat a couple of slices of bread every day, I
have an occasional treat, I try to keep my daily carbs below 40 and my
daily calories below 1500. I use low carb as way to control my hunger and
low calories to control my weight. This works for me.

You may be an "Atkins" dieter, Atkins uses ketosis to burn fat without
having to worry about counting calories (within limits obviously), some
people find this easier, and as long as you are strict with your carb count,
it seems to work for most people too.

Personally I'm not the best at resisting temptation, so I allow myself
bread and an occasional treat and count calories religiously. As long as my
daily total does not exceed 1500, I know that I will lose 2 lbs per week (on
average), if I go over "budget" one day, I make up for it the next. Atkins
does not allow you to do this, as it is easy to slip out of ketosis and then
it can take a few days to get back in.

If you eat your daily limit of carbs just by eating "Splenda", you are
depriving yourself of fibre which you would be eating if you took your daily
carb limit in vegetables, if you used your daily carb limit on olives or
cheese, you would be eating a lot of calories.

Atkins is not just about losing weight, it is also about teaching you to
control your eating habits. Eating anything to excess is not good for you
and will not teach you how to control your eating behaviour when you reach
your goal weight.

That said, if you are losing weight and OCCASIONALLY feel the need to
treat yourself to extra olives/cheese/splenda, you should do so if it helps
you to stay the course.

Snafu,
I really like your disclaimer. That's pretty neat.

Can't help, but almond meal and wheat gluten are probably going to be your
friend here.

Depends. If you're doing strict Atkins, then that means following the
rules. Although, since you've been at this for 4 weeks some of the
induction rules may not apply to you anymore. I don't do a strict Atkins
plan and I'm happy with my results, but some people prefer to have a line
to which they can hew.

examples...

cheese. book says 4 oz a day, but if carb level is under limit is more ok?

Maybe. Some people say that cheese causes their weight loss to stall.
Since it's quite high in calories, that may be a problem.

Are olives a vegetable? I've always given myself huge latitude in the
amount of lowcarb veggies I eat (the only way to pack the salads I eat
into 3 cups would be to use one of those vacuum sealers on it first). But,
again, olives are probably fairly calorie dense.

splenda book says only 3 packets a day, yet carb limit is ok even with 6
or 8..

I've also always been free range on my sweetener consumption (with my Diet
Coke addiction I could use up 20 carbs just there), but others have had
good results by reining it in.

Your body, your science project. There are too many variables involved for
us to say what will work for *you.* One way to find out is try it and see
what happens.
