low carb cookies from Trader Joe's
I have been buying the new "carb safe" low carb cookies from TJ's, but
i am really concerned that they can't possibly be as low as they are claiming (3 grams effective per cookie, 13 grams per cookie total), considering the ingredient list. Anyone have any ideas on this one? Shortening, sugar-free chocolate chips,unbleached wheat flour... Are the first three ingredients,and no mention of any "fake", low-carb flours, plus i am dubious of the accuracy of this list because i can't imagine a cookie holding together when the flour is the third ingredient on the list... I hope I'm wrong, because they are really good, but i think that these may be too good to be true. |

I've seen this before. I think it has to do with the fact that shortening is solid at room temperature. Does it have guar or xanthum gum in the ingredients? Those will help bind the cookie together. I hope I'm wrong, because they are really good, but i think that these may be too good to be true. How big are these cookies? I ask because Nabisco's Nilla wafers are something like 4 per cookie while the sugar free version I found is only 3, and the only 'lowcarb' ingredient was the sugar alcohol in place of sugar. Nilla wafers, for those who don't know, are roughly the size of a US fifty cent piece. I figured the one carb difference wasn't enough to justify the half size box and double price, so I just limit myself to one or two cookies. revek |
